Jazz using only one chord is a very, very narrow definition of jazz! Most of the jazz I know has far more complex harmony than that. Even the "jazz" forms of 12 bar blues take it from 3 chords and add several more. Jazz pianists and guitarists are infamous for taking something fairly simple and adding / modifying chords to make it more "interesting". EDIT: Endless noodling? Fair cop; One chord - just not true!
