My son has come home from school and told me that he has to make a healthy pudding, and get his own recipe. It needs to be able to be prepared and cooked within an hour, easy to transport home and ingredients not too heavy to carry.
I suggested fruit salad but that apparently wasn't any good.
Any ideas of any Healthy pudding!
It needs to be easy too, as he wants to have a go at home first before doing it at school, which means that I may need to help him, lol, and time constraints means it has to be easy lol

Pears can be baked in port ! They go a really nice colour !

What about rice pudding (with milk, not cream), perhaps with sultanas / raisins or with stewed apple and cinnamon? Or something else fruit-based such as a compote? Summer pudding?

My son had a similar request. He made baked apples with sultanas in the middle.

Baked apples is the only thing that I could come up with too. Do you have the recipe that your son used banjogirl? My problem is that when I cook I never use a recipe, I just bung things in and they always come out well. If I try and use a recipe that is when it tends to go wrong lol
I also thought of rice pudding but dismiised it due to time of cooking. Don't think that I had better send him with port though fsharpminor, he is only just 13 and I think the school may have something to say about that lol.

You must have been advising one of the year seven boys at my school-he came in with pears and port in a hip flask saying he thought it would be alright as his "dad was going to eat them"-the cookery teachers were on that fine line between annoyed and amused!

How about bananas wrapped in a foil pouch with honey, lemon and cinnamon and then baked in the oven. They cook quite quickly. Yum

Thanks for all the ideas, he actually came home today and said that he had decided to make a lemon cheese cake and brought a recipe home with him. I said we will substitute the cream for light fromage frais, and use a low fat soft cheese, thus hopefully making it healthy.
Just sitting there doing the shop as I thought he had to do it next week, and we need to do it in advance, then he tells me he isn't doing it until the 14th May!

That's a lot better than the way me and my brother and sister used to do our cookery stuff. Basically we'd run in at 7AM and go "Muuuuuuuuuum! I have to make a lemon cheesecake for foood today! I need ingredients!"
and just expect it to be dealt with.

Hmm yep I have had that too, but I specifically told him I needed notice this time. What is it with kids lol Mind you it isn't just kids it is husbands too. I am in bed last night and husband decides to start to do his packing and wants to know where all his shirts are. He doesn't like the ones in his wardrobe. Well I am sorry too bad, not getting out of bed to iron some others at nearly midnight! If he had asked me a couple of days before then I wouldn't have minded , but come on - last minute like that! lol

I know, hence why I had a problem working out what he could do lol. Still if we go forvirtually fat free fromage frais then that has to be healthier than a full fat cream.

you're right...I'm only crabby about the topic because I don't have a particularly sweet tooth and didn't grow up with regular puds after meals - I am regularly amazed by the myths and tosh about healthy eating which seem to emerge from my kids' home economics classes....
