They do (IMO) get better as you go on - the first couple are OK in comparison with a lot of "comedy fantasy" but far from his best.
If you liked Night Watch then I'd recommend the other "Watch" books, Guards! Guards!, Men At Arms, Feet Of Clay, Jingo, The Fifth Elephant - lots of Vimesy! I do think Night Watch is one of his best, it's clever and funny and has a lot to say for itself. Also, along with the estimable Vimes, you get to meet Lu Tze again which has to be good

There are some gems in the early books but I do think they get better.
It's worth trying "Good Omens" which he wrote with Neil Gaiman and I think is closer to the slightly darker style in which TP is writing now. Plus, I just think it's a very clever and funny book

It's worth reading "in order" within the characters, ie read all the witch books in order. Um. I don't think it matters too much, although later books are often funnier if you have read earlier books and get the in jokes! I have often found though, that Pratchett is very good at putting in in jokes in a way that isn't offputting if you don't "get" it, often I have not noticed a joke for several reads, and have only noticed it when I've known why it was a joke, if that makes sense...??!
