Reasonably good, when I have time to devote. But evening meals are usually something quick after I've done the afternoon / early evening teaching slots.
However we do manage to sit down most evenings and have a meal and it's not something I give up lightly (eek - gets off soapbox!)

I stick a couple of salmon steaks in the oven (20min). Serve on 'Tilde' Brown Basmati rice (2 min microwave, serves two), but whilst salmon is cooking I also boil some sweetcorn, chopped peppers (any colour or several) and peas and mix them with the basmati before serving. oh maybe some chopped mushrooms if I have any.
