That's an interesting observation. One of my goals as a pianist is to master Dame Myra Hess arrangement of "Jesu Joy of Man's Desiring", which is in fact her arrangement of the
Chorale from Cantata No 147It's extremely difficult to play well (Dinu Lipatti is said to have taken two years until he was satisfied with it) but there are numerous
easier arrangements available. Unfortunately, none of them can compete with the original, because there is so much more "music" in the original. It's always worth trying to play the best version you can, I think.

The Hess version is tricky, but well worth the efforts. I would'nt say it's that hard though...Lipatti was known to be very modest, i remember reading about him saying it would take two years to learn Tchaikovskys concerto as he was busy learning other music. The Edition Peters version is also very good, and quite hard, in fact i prefer it to the Hess.
As for the Canon in D, the Editions Henry Lemoine arrangement works really well.
