Wow really? Bouree is at grade 6
Mostly that would be because of the two distinct voices.... The rub is to keep the time, balance and contrast the voices and as everyone else says, get the last 4 bars right.. Remember grades are performance examinations and not just about playing through. You have to put your mark on the piece and perform it
Also remember that there are two other pieces to perform at grade 6. The fact that you can play something at the grade that you find fairly simple wouldn't place you at the required standard. We all find some pieces easy to play and other pieces hard.
Have a go at Tarrega's Pepita. Another board has that as a grade 7 piece and should give you an indication of your standard.

Whats at grade 8???
Get a full rundown from
Grade 8Seeing as you like JSB, probably a good piece for you would be Gavotte en Rondeau. That may test you a bit? Watch JW on youtube give a demo
HEREAlso not on the list, but a difficult piece to play correctly would be Cavatina. Again, another board has that as a supplementary grade 8 piece.

And also why is it so hard to learn guitar from sheet music???
It isn't hard to read music for guitar. The reason people find the process hard is because they don't know the note positons on the neck. If you have knowledge of the fretboard it isn't hard to apply one to the other. However, it may take some thought and forward plannng as to which may be the best position to play certain sections or phrases within a certain piece of music. And you may find the more you experiment with pieces, the more you find different ways to play it. The Bouree in question is a fine example of this in action and for me could be another reason as to why it is at grade 6.
