Much too hard. That's diploma level, easily. It is worth asking your teacher about Sarasate though, because he wrote some other, easier pieces.
There are a bunch of Weiniawski mazurkas which are this standard. One is on the grade 7 syllabus, one on the grade 8 syllabus. I would recommend them.
In general, Paganini is a bit tricky for grade 7/8. I just started learning one of his easier pieces (the Moses variations) and I took my grade 8 two years ago. All the caprices and very difficult, so are the concerti, and most of his smaller pieces.
If you like gypsy-style show-off pieces, you could explore some stuff by late Romantic Jewish composers...for example Brahms, Bruch and Bloch (during his Jewish phase), who write in a style which is similar to what you seem to be interested in. Also people like Kabalevsky - the Russian Romantics. And Kreisler's showpieces. Oh yeah, try the Suite Populaire Espagnole (Sarasate). You could even try the Schindler's List piece...NOT just the one everyone plays, which I don't think is even the best of the 3.
Two violinists you should deinitely explore are Roby Lakatos and Nigel Kennedy. Lakatos is this crazy gypsy guy who plays insane stuff very fast. I reckon you'd love him. He has a CD out. Nigel Kennedy plays classical pieces in a crazy way, and also plays stuff like jazz on violin. Lastly, try Perlman's CD called Virtuoso Violin, which is full of Sarasate and co.
