What exactly is 'detache' bowing? I don't have a book that names all the different bowings and it's getting frustrating. My teacher doesn't name the bowing techniques for me.

Staccato on the clarinet meant short sharp individual notes but am I to understand it's not quite so short on the violin especially when playing fast staccato. It's just getting a gap between the notes???

And what's 'spiccato'????

Yes, the descriptions on there are ok. Whoever wrote the wiki page is probably either a violinist or a student or someone who copied a lot of it from various violin pedagogue books.
