Hmm, where do I start? The first classical singer I ever liked was Kiri Te Kanawa, my dad had a tape of hers... I quietly appropriated it for myself, and still listen to it rather a lot. Lately I've been listening to Renee Fleming, Cecilia Bartoli and Catherine King, who is one of those superb warm-voiced mezzos you don't seem to hear about much. She sings a lot of early and Renaissance music, Dowland and that sort of thing. Her recording of "Lasso vita mia" is particularly haunting.
I never got into male singers in the same way, for some reason. I like listening to them and admire Bryn Terfel etc very much, but I wouldn't go and buy one of his albums... not sure why.
