It won't blow up unless you leave the oven on hot for a very long time - here's what I do
- parboil potatoes and carrots
- heat up oven as hot as it will go, put in a tray with a couple of spoonfuls of goose fat. Leave in for 5 minutes
- put in potatoes and carrots, shake around so they get coated with goose grease
- turn oven down to 150 degrees and roast as usual
If you like, you can give it a blast at top heat just before serving
