If you already have a couple of years experience of playing/learning the piano and can read music and understand basic scales and intervals, then I would suggest 2 excellent books written by Prof Dominic Alldis (Jazz Piano Tutor at the Royal Academy of Music). The first book is called "A Classical Approach to Jazz Piano: Exploring Harmony" and the second is "A Classical Approach to Jazz Piano: Improvisation".
