What Board does your college use? You could try to learn the written exam modules yourself, but you'd probably have either coursework or a practical exam to do for one module, which would be much more tricky.

I think teaching yourself M2 and M3 might be a safer option, although you'd need some support from your teachers. My son taught himself M2 last year (the class was doing S2), but his teacher was generally supportive and helped out when he had problems. He'll be teaching himself M3 this year in the same way - but his teacher has promised to find some notes to help, as there aren't any text books for it.
I agree that your Further Maths modules look a bit duff, but they're probably chosen to ensure that as many people as possible get good grades - M2 and M3 are harder, so more risky. Son is lucky that the class does FP1, 2, 3 & 4 (it's AQA), and only 2 applied modules.
