Oh yes - it's quite easy. A good non-stick pan is useful though - it's tricky if it sticks and better if it comes out slightly crispy.
You need leftover potatoes and some corned beef - a tin is ok and perhaps better than the sliced kind in a plastic pack because it's easier to cut the tinned stuff into nice little chunky pieces - the thin sliced sort is ok but it tends to disintegrate. It's difficult to give quantities - a 500g tin of corned beef and 2-3 med potatoes makes enough for 2 or 3, more if you're not too hungry. A small tin of beef and one potato is plenty for one.
Heat a tablespoon of olive oil in you pan and when it's hot put in the chopped up potatoes and stir them around for a bit. They need to be nice and dry when they go in, otherwise they get mushy before they brown. Cook them fairly gently and keep an eye on them to see they don't get too dark.
Meanwhile chop up the corned beef and when the potatoes have started to brown add the pieces of beef and mix in with the potato, so that it's fairly evenly distributed and so that everyone gets a fair mix of meat and potato.
Turn it over from time to time so that it gets brown on both sides - it won't all stay together in one piece while you do this but you can sometimes push it into the right number of portions while doing this and just sometimes they will stay intact. Not always though. A flat spatula works quite well. Turn down the heat if it threatens to stick.
It's cooked when it's starting to crisp up and the bits of potato are brown but not burnt. It's not an elegant dish, but even if it's not neat and tidy it still tastes quite good. If you like it with onions chop one up and give it a few minutes in the pan before the potatoes go in.
If you haven't got any left-over potato you can use uncooked potato, but you need to cook it for quite a bit longer of course, and make sure it's cooked through before you add the corned beef.
