I've just started learning some of the grade 7 viola scales, how fast would you actually play them in the exam?

Does it say anything on the title page of the scale book (or are you beyond needing a scale book, unlike me, LOL)?

I think the violin grade 1-5 says something about a pace consistent with accuracy and without undue accentuation. To be played with a clean firm tone. And it says something about legato bowing and using the whole of the bow when possible.

Maybe the g6-8 book has something similar. More complicated no doubt!!
